Strawberry vanilla chia pudding

  1. 1 cup almond milk (preferably homemade)
  2. 1 cup strawberries (plus a few extra for topping)
  3. 2 tbsp agave nectar
  4. 1/4 tsp vanilla powder
  5. 1/4 cup chia seeds
    – shredded coconut



Add almond milk, strawberries, agave nectar and vanilla powder to a blender and blend until combined. Stir in the chia seeds.
Divide between pots and store covered in the fridge overnight or until it’s achieved a pudding-like consistency.
Top with diced strawberries and shredded coconut (or your desired topping) and serve chilled.
It keeps in the fridge for up to 3 days.
